Homemade “Lara” Bars

Yikes! It’s been awhile since my last post. Life happens and it lasted for a couple of months for me. Well, I have a great recipe to share! If you are looking for a healthy snack you can toss in your bag to eat on the go or pack in lunch boxes…I am with you and I may have what you are looking for.
I have tried numerous recipes for homemade protein bars and granola bars. Every time I have been disappointed. I have purchased the Lara Bars but I have not tried to duplicate these raw bars and honestly have not found them to be that tasty, but healthy nonetheless. I even have a great recipe I found on making a raw chocolate cake, but have never made it into little chocolate bars. Check out that recipe here.
When a friend sent me a link to Enlightened Cooking’s post on Homemade Lara-Type bars, I was so excited!
I have made these bars several times already. They are easy to put together and fun for the kids to help with. They are great for a quick snack, fast breakfast with fresh fruit or a smoothie, or a late night snack.
Enlightened Cooking has definitely done her research on these bars and has come up with the perfect combination of nuts to fruit. I mean, why should I do the work when someone else has done it for me? That’s why I love the internet so much. All the work is done, I just do the easy part and make the great recipes! Then share what I find.
I have tried two different flavors of these homemade raw bars. Regular bars with cranberries, dates and nuts and my favorite, chocolate chip bars. Maybe next time I will add some Pumpkin Spice, tis the season…
These bars are great because they are raw, dairy-free and gluten-free. You can even add the tags of vegan and soy-free etc…
They are so simple to make too. I used my Blendtec blender to process the ingredients with no problems at all. I believe the secret to making a great bar like this is grinding the different ingredients separate then using your hands to mix it all together.
Once you have the basic recipe for these bars, it is easy to modify and add or take away as you like. For added protein and nutrients (to this already protein and nutrient-dense bar) I added a few spoonfuls of raw pumpkin seeds to one set of bars I made.
The recipes below make only two bars each, so you may want to double or even triple the recipe. I have tripled the recipe and my Blendtec blender had no trouble grinding up the nuts or fruits. Follow the directions closely for best results using your high powered blender. Or a food processor will work as well.
Begin with measuring out your ingredients and laying out your saran wrap. One square of saran wrap for each bar you plan on making.
Place the dried fruit into your blender and pulse to process into a paste. You may need to scrape down the sides a time or two. I used my large container, but either will work. Scrape the fruit paste into a large bowl.
In the same blender jar, place in the nuts of choice.I found if I used more almonds than walnuts, the bars were less oily. Grind until you get a grainy sandy texture. Scrape down as needed. Scrape ground nuts into the bowl with the fruit paste. Add cinnamon or flavorings.
Once all ingredients are chopped, ground or pureed and together in a large bowl, use your hands to mix up all the ingredients. I tried a spoon, but believe me, your hands work better. Once everything is mixed well, I found it easiest to shape the mixture into a ball. Then take a knife and cut the ball into even parts (according to how many bars you plan on making).
Place each piece on a sheet of saran wrap; now you are ready to form them into bars.
With clean hands fold the saran wrap over on the fruit mixture and shape. Then finish wrapping up the bar and store in the refrigerator.
Homemade “Lara” Bars basic ingredients:
Makes 2 bars
- 1/4 cup chopped dates
- 1/4 cup dried cherries or cranberries
- 1/3 cup whole pecans, almonds or walnuts
- 1/8 teaspoon cinnamon
Chocolate Chip Bars (makes 2 bars)
- 1/3 cup dates
- 1/2 cup nuts (seeds, pecans, almonds, walnuts)
- 1/2 ounce finely chopped chocolate chips
- 1/2 teaspoon vanilla
